  • 1⁄4 tsp apple cider vinegar
  • 1 egg
  • 11⁄2 tsp vanilla extract
  • 3 tbsp acacia honey
  • 60g brown rice flour or
  • coconut flour
  • 1⁄4 tsp sea salt
  • 1⁄4 tsp baking powder
  • 3 tsp stevia
  • 1⁄2 tsp ground cinnamon
  • 60g cashew or almond butter



  • Preheat oven to 180°C.
  • Combine all wet ingredients in a large bowl and mix thoroughly.
  • In separate bowl, mix together dry ingredients, then pour in the wet ingredients and mix thoroughly.
  • Drop teaspoons of batter on parchment lined baking tray and flatten gently with a fork.
  • Bake for around 10 minutes until golden.

Allow to cool and eat (but not all at once!)
